Winter – Coconut Snowballs

It’s the first day of winter so today we cooked coconut snowball. This is a great substitute for muesli bars in lunch boxes which can contain large amounts of sugar. Due to allergies we do not use nuts in this recipe but if that is not a problem for you, you can substitute some of the dried fruit for nuts.

What you need: –

1 cup of rolled oats

1 cup of desiccated coconut

1 ½ cups of dried fruit

Juice of one lemon

2 tablespoons of coconut oil

3 tablespoons of honey

1 teaspoon of vanilla

Extra coconut for rolling

Method:

Mix all ingredients together. Shape into teaspoon size balls and roll into shredded coconut.
